I don’t know about you, but in our house weekday breakfasts are pretty simple and routine–cereal, oatmeal, waffles or toast. But on Sunday mornings….Aaaahhh….I love the slower pace and the anticipation of a day spent together. So it seems only fitting that the day should start out with a special breakfast. And this recipe for Healthy Baked Chocolate Chip Donuts is just that–special! Not to mention healthy and delicious and did I mention special? LOL! My boys LOVE them so much that I usually double them so that there are some leftover for snacks. But fresh out of the oven–well, you don’t get much better than that!
Here’s the recipe so you can try them for your family, too! Oh, and I don’t have a “fancy” doughnut pan so I just use my mini muffin pan and it works perfectly. 😉
Healthy Baked Chocolate Chip Donuts
1 c. pancake mix-I used Kodiak Cakes
2 TB. cocoa powder
¼ c. coconut sugar
2 TB. melted coconut oil
½ c. milk of choice
¼ c. mini chocolate chips (my boys asked for white chocolate chips which was really pretty in the chocolate batter)
Whisk the pancake mix, cocoa powder, and coconut sugar together.
Then add the egg, coconut oil, and milk and whisk until combined.
Fold in the chocolate chips.
Grease a donut pan. (I didn’t have one so I used a mini muffin pan which worked great!)
Add the batter in a large plastic bag, and then cut the corner off.
Pipe the batter into each donut, filling almost all the way to the top.
(This should make about 5 regular sized donuts.). I doubled the recipe and got 24 mini doughnuts.
Bake at 350 for 12-14 minutes.
Let cool and then remove from the pan.
Top with desired toppings~I drizzled some melted white chocolate over and it was delicious!
