I will admit that I used to rely on bottled salad dressings because they were easy and came in a “healthy” version or low-fat, “light” version. But once you know better, you do better, right?! So when I started researching about Clean Eating, what I discovered was that my favorite “healthy” dressing (which just happened to be Newman’s Raspberry Walnut Lite Vinegarette in case you’re wondering) had high fructose corn syrup in it, along with lots of other processed and artificial ingredients.
So this has become my all-time favorite salad dressing! My “Go To” dressing. I make a double batch each weekend and we use it on almost everything! When I share this recipe with my clients and challengers, they are always like, “This is amazing and tastes so much better than my dressing I bought at the store!” I think you will agree!
My Favorite Salad Dressing Recipe
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar
3 to 5 cloves garlic, crushed
3 tbsp. fresh lemon juice
2 tbsp. chopped fresh parsley
1 tsp. Himalayan salt
1/2 tsp. Dijon mustard
1 tbsp honey or agave nectar
Place all ingredients in blender and blend on medium high for 30 seconds or until well mixed. Store in fridge. Makes 8-10 servings. I always double it!!
