I am a HUGE fan of my crockpot! There is nothing like walking into your house at the end of a busy day with the smell of dinner waiting for you! In fact, I am constantly on a quest to find yummy and healthy crockpot meals that my family will enjoy. I’m not always successful, but I thought I would share with you our TOP favorite dinner. My family loves it because it’s yummy. I love it because it’s healthy, the ingredients are super simple, and you can throw these ingredients in that crockpot FAST!
Crockpot Power Chicken
Place 3 pounds of chicken breasts (I use frozen) in the bottom of a crock pot. Rinse and drain a can or two of black beans and a can or two of corn and place over chicken breasts. Cover all of that with a large jar of salsa. Cook on low for at least 6-7 hours. I like to serve it for the boys over brown rice, and I like to have mine over a big bed of mixed greens. This is delicious leftover as you can use it in wraps! Oh, and when I eat it on a salad, I love making a homemade “sourcream” by mixing Greek yogurt with salsa. Delish!
